roast and cabbage

1 big roast, any kind
Couple shakes of Adobo (powdered Mexican seasoning, sometimes it's with the Mexican food, sometimes with the regular seasonings)
Couple pinches brown sugar (optional, and go easy on it)
fresh garlic
small bottle green olives stuffed with pimientos, do not drain
1 box or large can beef broth
cabbage
1 onion, sliced thin

Trim fat from roast. Using a very sharp knife, cut deep slits all over the roast. Stuff them alternately with olives and large pieces of garlic. Rub the roast with the Adobo (and the brown sugar, if using). In a dutch oven or big sturdy pot, brown the roast on all sides in a couple tablespoons of hot oil. Add the onion, rest of the green olives AND the olive juice, a little more garlic if you like, and the beef broth. (If the roast is very large, add some water until the roast is almost covered). Bring to a boil, then turn heat to low and cook for a couple of hours. The roast should be very tender.

You can also brown the roast and after that dump everything in a crock pot and cook for 6 hours on high or 8 on low, or until the roast falls apart. Put the cabbage and onions in the bottom of the crock pot first.

If not using a crock pot: Remove the roast from the broth and let it cool long enough to shred. In the meanwhile, cut up the cabbage, bring the broth to a boil, and cook the cabbage in the broth until done to your liking. Add the shredded roast and mix well.

*We like cabbage, so on Day 2 sometimes I'll cook another head of cabbage separately and then stir it in. This recipe is also good if you add a little hot sauce. DO NOT add salt, and DO NOT go overboard with the Adobo. Adobo is very salty, and so are the olives! This is great served by itself, but the broth is excellent on bread!

Hope you like it!
Sally

FACT OF THE DAY
The British Labour Party was formed today in 1906.
